Hoshizaki machines produce flawless, crystal-clear Crescent Cubes by running water over a proprietary Dual-Sided Stainless Steel Evaporator. However, this commercial engineering requires pristine conditions to function. Hard water is the natural enemy of this process. Over time, heavy calcium scale builds up on the evaporator plate, acting as an insulator. During the harvest cycle, the ice cannot drop. The machine then freezes a new layer of water over the stuck ice, eventually forming a massive, solid glacier that destroys the internal water curtain and triggers a system lockout on the EverCheck™ Control Board.
